Here’s a hearty and flavorful pancake recipe packed with satisfying ingredients a to keep your energy up for the entire morning.

Adding cacao to any of your favorite pancake, waffle, or quick-bread recipes is a great way to give them a powerful nutrition boost.

Ingredients

  • 1 cup of ripe banana mash - about 3 or 4 extra-ripe bananas.

  • A good chunk of ginger, about the size of your thumb. Powdered/pre-ground will work too

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 2 eggs

  • 1/4 cup coconut oil - melted butter or ghee are easy substitutes here

  • 1 tsp baking soda

  • 1 cup flour of your choice - I used whole grain wheat flour

  • 1 tsp salt

  • 1/2 cup milk - any type will work.

  • 1/2 cup chopped cacao

Directions

To the banana mash, add freshly grated ginger, cinnamon, nutmeg, and the melted coconut oil/butter, mix to combine.

Add both eggs, one at a time, whisking thoroughly to incorporate - make sure the eggs especially are fully mixed in. You're done mixing when you no longer see any streaks of egg white in the mixture.

In a larger bowl, whisk together the dry ingredients — flour, salt, and baking soda.

Add the banana & spice mixture to the dry ingredients 1/3 at a time — fold together until just combined — do not over stir.

Add milk to batter and mix until combined — some gluten-free flours may require an extra bit of liquid — use your best judgement, we're aiming for a batter that is thick but just loose enough to spread out on our skillets. Do not over stir as this will promote gluten formation if using a wheat-based flour, which may result in tougher pancakes.

Gently fold in crushed cacao.

Fry pancakes on a skillet over medium heat using fat/butter/oil of your choice.

Serve and enjoy!
